  • 1 1/2 cups Oreo cookie crumbs (about 14-16 cookies)
  • 1/4 cup unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup chopped Oreo cookies, for topping

Instructions

  1. In a medium bowl, combine Oreo cookie crumbs and melted butter. Press mixture evenly into the bottom of a 9-inch pie plate or springform pan.
  2. In a large bowl, beat softened cream cheese and granulated sugar with an electric mixer until smooth and creamy. Beat in vanilla extract.
  3. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.
  4. Pour the cream cheese filling over the Oreo crust and spread evenly.
  5. Chill the cheesecake in the refrigerator for at least 4 hours, or until firm.
  6. Before serving, sprinkle with chopped Oreo cookies.
