Ingredients
Scale
3 large ripe bananas
10 ounces dark chocolate chips or chopped chocolate
2 tablespoons coconut oil
1/4 cup creamy peanut butter
1 tablespoon powdered sugar (optional, for thinning peanut butter)
Instructions
Peel the bananas and slice them into rounds, about 1 inch thick. You should get about 30 pieces.
Place the banana slices on a baking sheet lined with parchment paper.
Freeze the banana slices for at least 2 hours, or until completely solid.
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring well after each, until the chocolate is smooth and fully melted.
In a separate small bowl, mix the peanut butter. If it is too thick to drizzle, microwave it for 10 seconds or stir in the powdered sugar until it is slightly thinner.
Remove the frozen banana slices from the freezer. Working quickly, dip each frozen slice into the melted chocolate, ensuring it is fully coated. Let excess chocolate drip off.
Place the dipped bites back onto the parchment-lined sheet.
Immediately drizzle the thinned peanut butter over the chocolate coating on each bite.
Return the bites to the freezer for at least 30 minutes to allow the chocolate coating to set completely.
Store the finished bites in an airtight container in the freezer.
Notes
For the best chocolate coating, use high-quality chocolate.
If you want a thinner chocolate coating, add a teaspoon of vegetable shortening to the melted chocolate.
You can substitute almond butter or sunflower seed butter for peanut butter if needed.
