Make these simple, no-bake cheesecake stuffed strawberries for a quick, individual dessert that requires no oven time.

  • 12 large fresh strawberries
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon heavy cream
  • 1 tablespoon graham cracker crumbs (optional, for topping)

Instructions

  1. Wash and thoroughly dry the strawberries. Slice a small piece off the bottom of each strawberry so it sits flat. Carefully core the strawberries using a small knife or melon baller, creating a cavity for the filling.
  2. In a medium bowl, beat the softened cream cheese until smooth.
  3. Add the powdered sugar, vanilla extract, and heavy cream to the cream cheese. Mix until the filling is light and creamy.
  4. Transfer the cheesecake filling to a piping bag fitted with a star tip, or use a small spoon.
  5. Pipe or spoon the cheesecake filling into the hollowed-out strawberries. Do not overfill.
  6. If desired, sprinkle the tops lightly with graham cracker crumbs.
  7. Chill the stuffed strawberries for at least 30 minutes before serving to allow the filling to set slightly.

Notes

  • For best results, make sure your cream cheese is fully softened to prevent lumps in the filling.
  • You can prepare the strawberries (coring them) up to 4 hours ahead of time and store them covered in the refrigerator.
  • If you do not have a piping bag, use a small zip-top bag, snip a corner off, and use that to pipe the filling.
