- 3 large very ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, mash the ripe bananas until mostly smooth.
- Stir the melted butter into the mashed bananas.
- Mix in the sugar, beaten egg, and vanilla extract until combined.
- In a separate small bowl, whisk together the baking soda and salt. Add this mixture to the wet ingredients.
- Add the flour to the wet ingredients. Mix only until just combined; do not overmix.
- Pour the batter into the prepared loaf pan.
- Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
