8 ounces cream cheese, softened
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/4 cup sour cream
1/2 cup graham cracker crumbs
2 tablespoons melted butter
1 tablespoon granulated sugar
Instructions
Preheat your oven to 325°F (160°C). Line a mini muffin tin with liners or grease it well.
In a medium bowl, beat the softened cream cheese and 1/2 cup granulated sugar until smooth and creamy.
Beat in the egg and vanilla extract until just combined.
Stir in the sour cream until the mixture is smooth.
In a separate small bowl, combine the graham cracker crumbs and 1 tablespoon granulated sugar. Stir in the melted butter until the crumbs are moistened.
Press about 1 teaspoon of the graham cracker mixture into the bottom of each mini muffin cup.
Spoon the cream cheese mixture over the graham cracker crust, filling each cup about two-thirds full.
Bake for 15-18 minutes, or until the edges are set and the centers are slightly soft.
Let the cheesecakes cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
Chill the mini cheesecakes in the refrigerator for at least 2 hours before serving.
