  • 1/4 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 6 medium apples, peeled, cored, and diced
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 tablespoon lemon juice
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon turbinado sugar (for sprinkling)

Instructions

  1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, combine the diced apples, granulated sugar, flour, cinnamon, and nutmeg. Toss gently to coat the apples evenly.
  3. Add the lemon juice and diced butter to the apple mixture. Stir to combine.
  4. Unroll the pie crusts. Using a 4-inch round cutter, cut out circles from the crusts. You should get about 8-10 circles per crust.
  5. Place a tablespoon or two of the apple filling onto one half of each crust circle.
  6. Fold the other half of the crust over the filling to create a semi-circle. Crimp the edges with a fork to seal.
  7. Place the mini pies on the prepared baking sheets.
  8. Brush the tops of the pies with the beaten egg wash. Sprinkle with turbinado sugar.
  9. Bake for 20-25 minutes, or until the crust is golden brown and the filling is bubbly.
  10. Let the mini apple pies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
