- 1 tablespoon all-purpose flour
- 1 teaspoon ground cinnamon

- 6 medium apples, peeled, cored, and diced
- 2 tablespoons unsalted butter, cut into small pieces
- 1 tablespoon lemon juice
- 1 large egg, beaten (for egg wash)
- 1 tablespoon turbinado sugar (for sprinkling)
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, combine the diced apples, granulated sugar, flour, cinnamon, and nutmeg. Toss gently to coat the apples evenly.
- Add the lemon juice and diced butter to the apple mixture. Stir to combine.
- Unroll the pie crusts. Using a 4-inch round cutter, cut out circles from the crusts. You should get about 8-10 circles per crust.
- Place a tablespoon or two of the apple filling onto one half of each crust circle.
- Fold the other half of the crust over the filling to create a semi-circle. Crimp the edges with a fork to seal.
- Place the mini pies on the prepared baking sheets.
- Brush the tops of the pies with the beaten egg wash. Sprinkle with turbinado sugar.
- Bake for 20-25 minutes, or until the crust is golden brown and the filling is bubbly.
- Let the mini apple pies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
