Ingredients
Scale
2 large cucumbers, chopped
3 medium ripe tomatoes, chopped
1/2 cup crumbled feta cheese
1/2 cup Kalamata olives, pitted
1/4 cup thinly sliced red onion
1/4 cup fresh parsley, chopped
3 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Wash and chop the cucumbers and tomatoes into bite-sized pieces. Place them in a large mixing bowl.
Add the crumbled feta cheese, Kalamata olives, and thinly sliced red onion to the bowl.
In a small separate bowl, whisk together the olive oil, fresh lemon juice, dried oregano, salt, and pepper to create the dressing.
Pour the dressing over the vegetables and cheese mixture.
Gently toss all ingredients until they are evenly coated.
Stir in the chopped fresh parsley just before serving.
Notes
Use English cucumbers for fewer seeds and thinner skin, or peel them if the skin is thick.
For stronger flavor, let the salad rest in the refrigerator for 15 minutes before serving to allow the flavors to meld.
If you prefer a tangier dressing, substitute 1 tablespoon of the lemon juice with red wine vinegar.
