1.5 lbs boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp Italian seasoning
Salt and pepper to taste
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, drained and chopped
1 cup chicken broth
1 cup heavy cream
1/4 cup grated Parmesan cheese
Fresh basil, chopped, for garnish
Instructions
Cut chicken breasts into bite-sized pieces.
Season chicken with Italian seasoning, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat.
Add chicken and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
Add minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
Pour in chicken broth and heavy cream. Bring to a simmer, stirring occasionally.
Stir in Parmesan cheese until melted and the sauce is smooth.
Return chicken to the skillet and toss to coat in the sauce.
Simmer for 5 minutes, or until the sauce has thickened slightly.
Serve hot, garnished with fresh basil.
Notes
You can substitute chicken thighs for chicken breasts if desired.
For a lighter sauce, you can use half-and-half instead of heavy cream.
Serve with your favorite pasta, rice, or crusty bread.
