  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Fresh basil, chopped, for garnish

Instructions

  1. Cut chicken breasts into bite-sized pieces.
  2. Season chicken with Italian seasoning, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add chicken and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
  5. Add minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
  6. Pour in chicken broth and heavy cream. Bring to a simmer, stirring occasionally.
  7. Stir in Parmesan cheese until melted and the sauce is smooth.
  8. Return chicken to the skillet and toss to coat in the sauce.
  9. Simmer for 5 minutes, or until the sauce has thickened slightly.
  10. Serve hot, garnished with fresh basil.
