  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning

  • 2 tablespoons butter
  • 1 small yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped (for garnish)

Instructions

  1. Pat the chicken breasts dry. Season them evenly on both sides with salt, pepper, garlic powder, and Italian seasoning.
  2. Heat the olive oil and butter in a large, oven-safe skillet over medium-high heat.
  3. Sear the seasoned chicken breasts for 4 to 5 minutes per side until golden brown. Remove the chicken from the skillet and set it aside on a plate.
  4. Reduce the heat to medium. Add the chopped onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute until fragrant.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Add the chopped sun-dried tomatoes. Let this simmer for 2 minutes.
  6. Stir in the heavy cream and bring the sauce to a gentle simmer. Cook for 3 to 4 minutes until the sauce begins to thicken slightly.
  7. Stir in the grated Parmesan cheese until the sauce is smooth. Taste the sauce and add more salt or pepper if needed.
  8. Return the seared chicken breasts to the skillet, nestling them into the sauce. Cover the skillet and let it simmer on low heat for 5 to 7 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  9. Remove the skillet from the heat. Garnish generously with fresh chopped basil before serving. Serve this creamy chicken dinner immediately over rice, pasta, or with crusty bread.
