  • 1 pound firm cheese (like Monterey Jack or Mozzarella), cut into 1-inch cubes
  • 1 cup olive oil
  • 4 cloves garlic, thinly sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon black peppercorns
  • 1 bay leaf

Instructions

  1. Place the cheese cubes in a clean, airtight glass jar or container.
  2. In a small bowl, combine the olive oil, sliced garlic, oregano, basil, red pepper flakes, peppercorns, and bay leaf. Stir gently.
  3. Pour the seasoned oil mixture over the cheese cubes, ensuring they are completely submerged.
  4. Seal the container tightly.
  5. Refrigerate for at least 24 hours before serving to allow the cheese to absorb the flavors.
  6. For best results, let the cheese sit at room temperature for 30 minutes before serving.

Notes

  • Use firm cheeses that hold their shape well during marination.
  • You can substitute fresh herbs for dried, but use about three times the amount.
  • Drain some of the oil before serving if you prefer a less oily presentation.
  • This appetizer keeps well in the refrigerator for up to two weeks.
