2 pounds frozen tater tots
1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 can (10.5 ounces) condensed cream of mushroom soup
1 cup sour cream
1 teaspoon salt
1/2 teaspoon black pepper
2 cups shredded cheddar cheese
1/2 cup crushed potato chips (optional, for topping)
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, cook the ground beef and chopped onion over medium-high heat until the beef is browned and the onion is tender. Drain off any excess grease. Stir in the minced garlic and cook for 1 more minute until fragrant.
In a large bowl, combine the cooked beef mixture, condensed cream of mushroom soup, sour cream, salt, and pepper. Mix well.
Stir in 1.5 cups of the shredded cheddar cheese into the beef mixture.
Spread the tater tots in an even layer in a 9×13 inch baking dish.
Pour the beef and cheese mixture evenly over the tater tots.
Sprinkle the remaining 1/2 cup of cheddar cheese over the top. If desired, sprinkle the crushed potato chips over the cheese for extra crunch.
Bake for 25-30 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
Let it rest for a few minutes before serving.
Notes
For a spicier kick, add a pinch of cayenne pepper to the beef mixture.
You can substitute the cream of mushroom soup with cream of chicken or cream of celery soup.
Feel free to add other vegetables like peas or corn to the beef mixture.
