  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 8 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 green onions, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes and prick them several times with a fork.
  3. Rub the potatoes with olive oil, salt, and pepper.
  4. Bake for 45-60 minutes, or until tender.
  5. Let the potatoes cool slightly, then cut them in half lengthwise.
  6. Scoop out the flesh from each potato half, leaving about a 1/4-inch shell.
  7. Place the potato shells on a baking sheet.
  8. Bake for another 10-15 minutes, or until the edges are crispy.
  9. Fill each potato skin with crumbled bacon and shredded cheddar cheese.
  10. Bake for 5-7 minutes more, until the cheese is melted and bubbly.
  11. Top with sour cream and chopped green onions before serving.

  • For extra crispy skins, you can scoop out a little more potato flesh.
