2 tablespoons butter
1 medium yellow onion, chopped
2 stalks celery, chopped
3 cloves garlic, minced
1/4 cup all-purpose flour
4 cups chicken broth
4 large Russet potatoes, peeled and diced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
2 cups milk or half-and-half
1 cup shredded sharp cheddar cheese
8 slices bacon, cooked and crumbled
1/4 cup chopped fresh green onions, for garnish
Instructions
Melt butter in a large pot or Dutch oven over medium heat. Add onion and celery; cook until soft, about 5 minutes.
Add garlic and cook for 1 minute until fragrant.
Stir in flour and cook for 1 minute, stirring constantly.
Gradually whisk in chicken broth until smooth.
Add diced potatoes, salt, pepper, and thyme. Bring the mixture to a boil, then reduce heat and simmer, covered, for 15 to 20 minutes, or until potatoes are tender.
Remove the pot from the heat. Use an immersion blender to partially blend the soup until you reach your desired thickness. Alternatively, scoop out 2 cups of soup, blend until smooth, and return it to the pot.
Stir in the milk or half-and-half and the shredded cheddar cheese until the cheese melts completely and the soup is creamy. Do not boil after adding dairy.
Taste and adjust seasoning if needed.
Ladle the soup into bowls and top each serving with crumbled bacon and fresh green onions.
Notes
For a thicker soup, use only 3 cups of broth initially.
If you prefer a smokier flavor, use smoked paprika when seasoning.
Shred your own cheddar cheese for the best melting quality. Pre-shredded cheese often contains anti-caking agents.
