Make this quick, flavorful chicken dinner in one skillet using fresh lemon, garlic, and a mix of bright herbs.

  • 1.5 lb boneless, skinless chicken thighs or breasts, cut into 1.5-inch pieces
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon fresh rosemary, chopped

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6 to 8 minutes. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant. Do not let the garlic burn.
  4. Pour in the chicken broth, lemon juice, and lemon zest. Scrape up any browned bits from the bottom of the pan. Stir in the dried oregano. Let the sauce simmer and reduce slightly for 2 minutes.
  5. Stir in the butter until it melts and the sauce thickens slightly.
  6. Return the cooked chicken to the skillet. Toss to coat the chicken in the sauce.
  7. Remove the skillet from the heat. Stir in the fresh parsley, thyme, and rosemary.
  8. Serve immediately over rice or with crusty bread to soak up the pan sauce.

Notes

  • For a richer sauce, use chicken thighs instead of breasts.
  • If you prefer a milder garlic flavor, add the garlic halfway through the chicken cooking time instead of at the beginning.
  • This dish pairs well with steamed green beans or roasted asparagus.
