Ingredients
Scale
1 cup unsalted butter, melted
2 cups granulated sugar
4 large eggs
1 tablespoon lemon zest
1/4 cup fresh lemon juice
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup powdered sugar (for glaze)
2 tablespoons fresh lemon juice (for glaze)
Instructions
Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang.
In a large bowl, whisk together the melted butter and granulated sugar until combined.
Beat in the eggs one at a time until fully incorporated.
Stir in the lemon zest, lemon juice, and vanilla extract.
In a separate bowl, whisk together the flour, salt, and baking powder.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Spread the batter evenly into the prepared pan.
Bake for 25 to 30 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached.
Let the brownies cool completely in the pan on a wire rack.
To make the glaze, whisk together the powdered sugar and 2 tablespoons of lemon juice until smooth. Add more lemon juice, a few drops at a time, if needed to reach a thick but pourable consistency.
Pour the glaze over the cooled brownies and spread evenly. Let the glaze set before cutting into squares.
Notes
For extra fudgy texture, slightly underbake the brownies by about 2 minutes.
Use fresh lemon zest and juice for the brightest flavor.
Chill the brownies for 30 minutes after glazing to help the glaze set firmly.
