Brighten your day with this Lemon Blueberry Focaccia, a delightful twist on a classic Italian bread. It’s soft, airy, and bursting with the fresh flavors of lemon and blueberries, perfect for a sweet treat or a beautiful accompaniment to your meal.

  • 2 ¼ teaspoons active dry yeast
  • 1 ½ cups warm water (105-115°F)
  • 1 teaspoon granulated sugar
  • 3 ½ cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • ¼ cup olive oil, plus more for greasing
  • Zest of 1 lemon
  • ½ cup fresh blueberries
  • 2 tablespoons chopped fresh rosemary (optional)
  • Flaky sea salt for topping

Instructions

  1. In a small bowl, combine the warm water, yeast, and sugar. Let it sit for 5-10 minutes until foamy.
  2. In a large bowl, whisk together the flour and salt.
  3. Pour the yeast mixture and ¼ cup olive oil into the flour mixture. Mix until a shaggy dough forms.
  4. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  5. Lightly grease a clean bowl with olive oil. Place the dough in the bowl, turning to coat. Cover with plastic wrap and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Grease a 9×13 inch baking pan with olive oil.
  7. Gently punch down the dough and transfer it to the prepared baking pan. Press the dough evenly into the pan.
  8. Drizzle with a little more olive oil.
  9. Dimple the surface of the dough with your fingers.
  10. Sprinkle the lemon zest, blueberries, and rosemary (if using) over the dough.
  11. Let the dough rest, uncovered, for another 20-30 minutes.
  12. Preheat your oven to 400°F (200°C).
  13. Sprinkle flaky sea salt over the top.
  14. Bake for 20-25 minutes, or until golden brown and cooked through.
  15. Let cool slightly in the pan before transferring to a wire rack.

Notes

  • For an extra burst of lemon flavor, you can add a tablespoon of lemon juice to the dough.
  • If fresh blueberries are not available, frozen blueberries can be used, but be sure to thaw them and pat them dry before adding.
  • The rosemary is optional but adds a lovely aromatic quality that complements the lemon and blueberry.
