1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
2 tablespoons butter
4 ounces cream cheese, softened
1 cup heavy whipping cream
1/2 cup grated Parmesan cheese, plus extra for topping
2 cloves garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
3 medium zucchini, spiralized into noodles (zoodles)
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Season the chicken pieces lightly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and cook for 30 seconds until fragrant. Do not let the garlic burn.
Add the heavy whipping cream and cream cheese to the skillet. Whisk constantly until the cream cheese has fully melted and the sauce is smooth.
Stir in the Parmesan cheese, salt, and pepper. Continue to cook, stirring occasionally, until the sauce thickens slightly, about 3-5 minutes.
Add the cooked chicken back into the sauce. Stir to coat. Keep warm on low heat.
Divide the zoodles among serving plates. Top with the creamy chicken Alfredo sauce.
Garnish with fresh parsley and extra grated Parmesan cheese before serving.
Notes
For a thicker sauce, simmer for an extra minute or two, or add 1/4 teaspoon of xanthan gum mixed with a teaspoon of cold water while whisking vigorously.
If you prefer a different low-carb noodle, shirataki noodles work well; rinse them thoroughly before using.
You can substitute chicken thighs for breasts if you prefer a higher fat content.
