Follow these steps to create a refreshing, layered Iced Strawberry Matcha Latte using a simple homemade strawberry puree.

  • 1 cup fresh or frozen strawberries
  • 2 tablespoons granulated sugar (adjust to taste)
  • 1 teaspoon water
  • 1 teaspoon matcha powder (ceremonial or culinary grade)
  • 2 tablespoons hot water (not boiling)
  • 1 cup milk of choice (dairy, almond, or oat)
  • Ice cubes

Instructions

  1. Prepare the strawberry puree: Combine strawberries, sugar, and 1 teaspoon of water in a small saucepan. Heat over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens slightly, about 5 to 7 minutes. Mash any remaining large pieces. Remove from heat and let cool slightly.
  2. Strain the puree if you prefer a smoother syrup, or leave it chunky. Set aside.
  3. Prepare the matcha: Sift the matcha powder into a small bowl or a traditional matcha bowl. Add 2 tablespoons of hot water. Whisk vigorously in a ‘W’ or ‘M’ motion until the matcha is fully dissolved and frothy with no clumps.
  4. Assemble the drink: Place ice cubes into a tall glass. Pour the strawberry puree over the ice.
  5. Gently pour the milk over the ice and puree layer.
  6. Slowly pour the prepared matcha mixture over the back of a spoon held just above the milk layer to create a distinct layer on top.
  7. Serve immediately.

Notes

  • For a dairy-free option, oat milk provides the creamiest texture that complements the matcha well.
  • Adjust the sugar in the puree based on the sweetness of your strawberries.
  • If you do not have a whisk, you can shake the matcha and hot water vigorously in a sealed jar until smooth.
