A recipe for making a refreshing, coffee shop style iced lavender latte at home, including instructions for homemade lavender syrup.

Ingredients

  • 1/4 cup water
  • 1/4 cup granulated sugar
  • 1 tablespoon dried culinary lavender buds
  • 1/2 cup strong brewed coffee or 2 shots espresso, cooled
  • 1 cup milk (dairy or non-dairy)
  • Ice cubes
  • Optional: 1 teaspoon vanilla extract

Instructions

  1. Make the lavender syrup: Combine water, sugar, and dried lavender buds in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Do not boil.
  2. Remove the syrup mixture from the heat. Let the lavender steep in the hot syrup for 20 minutes.
  3. Strain the syrup through a fine-mesh sieve into a clean jar, discarding the lavender buds. You now have lavender simple syrup. Let it cool completely.
  4. Prepare your coffee: Brew your coffee or pull your espresso shots and allow them to cool to room temperature or chill them slightly.
  5. Assemble the latte: Fill a tall glass with ice cubes.
  6. Add 2 to 3 tablespoons of the cooled lavender simple syrup to the glass, adjusting to your preferred sweetness.
  7. Pour the cooled coffee or espresso over the syrup and ice.
  8. Slowly pour the milk over the coffee mixture. If you want a layered look, pour the milk gently over the back of a spoon.
  9. Serve immediately. Stir before drinking to combine the layers.

Notes

  • For a dairy-free option, use oat milk or almond milk. Oat milk provides the creamiest texture.
  • If you prefer a stronger floral flavor without making more syrup, steep the lavender for 30 minutes instead of 20.
  • To make a concentrate for quicker preparation later, double the syrup recipe and store it in the refrigerator for up to two weeks.
  • For a vanilla note, add 1 teaspoon of vanilla extract to the syrup while it is steeping.
