Ingredients
Scale
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup hot cocoa mix (standard packet variety)
1 cup semi-sweet chocolate chips
1 cup mini marshmallows, plus extra for topping
1/4 cup powdered sugar (for dusting/swirl)
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, cocoa powder, baking soda, salt, and hot cocoa mix.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Fold in the chocolate chips.
Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between them.
Gently press a few extra mini marshmallows onto the top of each dough ball.
Bake for 9 to 11 minutes. The edges should look set, but the centers will still look slightly soft.
Remove from the oven. Immediately press a small amount of powdered sugar onto the warm marshmallows to create a swirl effect, mimicking the look of a mug top.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For the fudgiest texture, slightly underbake the cookies; they firm up as they cool.
If you want a stronger chocolate flavor, substitute 1/4 cup of the flour with an equal amount of dark cocoa powder.
These cookies are best enjoyed the day they are made, but store them in an airtight container at room temperature for up to 3 days.
