Prepare a fast, flavorful weeknight meal featuring shrimp coated in a sweet and spicy honey sriracha glaze, served over jasmine rice with crisp vegetables.

  • 1 lb large shrimp, peeled and deveined
  • 1 cup jasmine rice
  • 1 tablespoon olive oil
  • 1 cup shelled edamame, frozen
  • 2 cups shredded green cabbage
  • 1 tablespoon sesame oil
  • 1 teaspoon ground ginger
  • 1/4 cup honey
  • 3 tablespoons sriracha sauce
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch
  • 2 green onions, sliced, for garnish
  • 1 tablespoon sesame seeds, toasted, for garnish

Instructions

  1. Cook the jasmine rice according to package directions. Keep warm.
  2. In a small bowl, whisk together the honey, sriracha sauce, soy sauce, rice vinegar, ground ginger, and cornstarch until smooth. This is your sauce.
  3. Heat the olive oil in a large skillet or wok over medium-high heat. Add the frozen edamame and cook, stirring occasionally, until they begin to brown and crisp, about 5 minutes. Remove the edamame and set aside.
  4. Add the shrimp to the same skillet. Cook for 2-3 minutes per side until pink and opaque. Do not overcook.
  5. Pour the prepared honey sriracha sauce over the shrimp. Stir constantly until the sauce thickens and coats the shrimp evenly, about 1 minute. Remove the skillet from the heat.
  6. In a separate small bowl, toss the shredded cabbage with the sesame oil.
  7. To assemble the bowls, divide the cooked rice among serving bowls. Top the rice with the saucy shrimp, the crispy edamame, and the sesame cabbage.
  8. Garnish each bowl with sliced green onions and toasted sesame seeds before serving.

Notes

  • For extra heat, add a pinch of red pepper flakes to the sauce mixture.
  • You can substitute broccoli florets or snap peas for the cabbage if desired.
  • If you prefer a thicker glaze, let the sauce simmer for an extra minute before adding the shrimp back in.
