  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup honey
  • 1/4 cup sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced fresh garlic

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a baking sheet with foil and place a wire cooling rack on top of the foil.
  2. Pat the chicken wings completely dry using paper towels. This step is crucial for crispiness.
  3. In a large bowl, toss the dry wings with baking powder, salt, and pepper until evenly coated.
  4. Arrange the wings in a single layer on the wire rack, ensuring they do not touch.
  5. Bake for 25 minutes. Flip the wings over and bake for another 20 to 25 minutes, or until the skin is golden brown and very crisp.
  6. While the wings finish baking, prepare the sauce. In a small saucepan, combine the honey, sriracha, soy sauce, rice vinegar, and garlic.
  7. Heat the sauce mixture over medium heat, stirring constantly until it simmers and thickens slightly, about 3 minutes. Remove from heat.
  8. Place the hot, crispy wings into a large, clean bowl. Pour the honey sriracha sauce over the wings and toss gently until every piece is fully coated.
  9. Serve immediately while hot and sticky.

  • Using a wire rack allows air to circulate completely around the wings, which helps them crisp up on the bottom.
  • Do not skip drying the wings thoroughly; excess moisture prevents crisping.
