1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon olive oil
1/2 cup honey
1/4 cup Sriracha sauce
2 tablespoons soy sauce
1 tablespoon rice vinegar
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 tablespoon cornstarch
2 tablespoons cold water
Optional garnish: Sesame seeds and sliced green onions
Instructions
Season the chicken pieces lightly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
In a small bowl, whisk together the honey, Sriracha, soy sauce, rice vinegar, minced garlic, and grated ginger. This is your sauce base.
Pour the sauce base into the hot skillet. Bring the mixture to a simmer over medium heat, stirring constantly.
In a separate small bowl, mix the cornstarch and cold water until smooth to create a slurry.
Whisk the slurry into the simmering sauce. Continue to cook, stirring, until the sauce thickens into a glaze, about 1-2 minutes.
Return the cooked chicken to the skillet. Toss the chicken gently until every piece is fully coated in the sticky glaze.
Cook for 1 minute more to heat the chicken through.
Remove from heat. Garnish with sesame seeds and green onions before serving.
Notes
For a thicker glaze, use 1.5 tablespoons of cornstarch instead of 1 tablespoon.
If you prefer less heat, reduce the Sriracha to 3 tablespoons.
Serve this chicken over steamed rice or with steamed broccoli.
