4 bone-in, skin-on chicken thighs
1/4 cup soy sauce
1/4 cup honey
2 tablespoons rice vinegar
1 tablespoon fresh ginger, grated
2 cloves garlic, minced
1 teaspoon sesame oil
1/2 teaspoon black pepper
1 tablespoon vegetable oil (for searing)
Instructions
Pat the chicken thighs completely dry using paper towels. This step is key for crispiness.
In a bowl, whisk together the soy sauce, honey, rice vinegar, grated ginger, minced garlic, sesame oil, and black pepper to create the marinade.
Place the chicken thighs in a shallow dish and pour half of the marinade over them. Turn to coat. Reserve the remaining half of the marinade for glazing later.
Marinate the chicken in the refrigerator for at least 30 minutes, or up to 4 hours.
Preheat your oven to 400°F (200°C).
Heat the vegetable oil in an oven-safe skillet (cast iron works well) over medium-high heat until shimmering.
Place the chicken thighs skin-side down in the hot skillet. Sear for 5 to 7 minutes without moving them until the skin is deeply golden brown and crisp.
Flip the chicken thighs. Brush the seared skin lightly with some of the reserved marinade.
Transfer the skillet to the preheated oven. Bake for 15 to 20 minutes, or until the internal temperature reaches 165°F (74°C).
Remove the skillet from the oven. Brush the chicken with more of the reserved marinade. Let the chicken rest in the skillet for 5 minutes before serving.
Notes
For extra crispiness, you can briefly broil the chicken for the last 1-2 minutes of cooking, watching closely to prevent burning the glaze.
Serve with steamed rice and blanched broccoli or green beans.
If you prefer boneless, skinless thighs, reduce the cooking time by about 5-8 minutes.
