1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
1/4 cup soy sauce
3 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
2 cloves garlic, minced
1 tablespoon vegetable oil
2 cups cooked white or brown rice
1 cup steamed broccoli florets
1/2 cup sliced carrots
2 green onions, sliced for garnish
1 teaspoon sesame seeds for garnish
Instructions
In a medium bowl, whisk together the soy sauce, honey, rice vinegar, ginger, and garlic to make the glaze.
Add the cut chicken pieces to the glaze, tossing to coat. Let it marinate for at least 5 minutes while you prepare the pan.
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the marinated chicken to the hot skillet, reserving any extra marinade. Cook for 5 to 7 minutes, turning occasionally, until the chicken is cooked through and lightly browned.
Pour the reserved marinade into the skillet. Bring the sauce to a simmer and cook for 1 to 2 minutes, stirring constantly, until the sauce thickens into a sticky glaze that coats the chicken.
Assemble your bowls: Divide the cooked rice among serving bowls. Top with the honey soy chicken, steamed broccoli, and sliced carrots.
Garnish with sliced green onions and sesame seeds before serving.
Notes
For faster cooking, use thin chicken cutlets instead of 1-inch cubes.
If you prefer a thicker glaze, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it into the simmering sauce during the last minute of cooking.
