  • 2 cups cooked, shredded chicken
  • 1 cup red or green grapes, halved
  • 1/2 cup celery, finely chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions

  1. Place the shredded chicken in a medium bowl.
  2. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, honey, apple cider vinegar, salt, and pepper until smooth. This is your dressing.
  3. Pour the dressing over the shredded chicken. Mix gently until the chicken is evenly coated.
  4. Fold in the halved grapes and the chopped celery. If using nuts, add them now.
  5. Stir everything together until just combined. Avoid overmixing.
  6. Taste the salad and adjust seasoning if needed. Add more honey for sweetness or mustard for tang.
  7. Cover the bowl and chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.

Notes

  • You can use poached, grilled, or rotisserie chicken for this recipe. Poached chicken yields the most tender result.
  • For a lighter salad, substitute half of the mayonnaise with plain Greek yogurt.
  • This salad keeps well in an airtight container in the refrigerator for up to 4 days.
