Prepare this fast and flavorful honey garlic shrimp served over rice with steamed broccoli for a simple weeknight dinner.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup brown rice
  • 2 cups water or broth
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the brown rice according to package directions using water or broth. Set aside.
  2. Steam the broccoli florets until tender-crisp, about 5 minutes. Set aside.
  3. In a small bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, ginger, and red pepper flakes to make the sauce.
  4. Heat the olive oil in a large skillet over medium-high heat. Season the shrimp lightly with salt and pepper.
  5. Add the shrimp to the hot skillet in a single layer. Cook for 1 to 2 minutes per side until pink and opaque.
  6. Pour the honey garlic sauce over the shrimp. Cook for 1 minute, stirring constantly, until the sauce thickens and coats the shrimp well. Do not overcook the shrimp.
  7. To assemble the bowls, divide the cooked rice among serving bowls. Top with the honey garlic shrimp and steamed broccoli.

Notes

  • For a gluten-free version, use tamari instead of soy sauce.
  • You can substitute quinoa or cauliflower rice for brown rice.
  • If you prefer a thicker glaze, simmer the sauce for an extra minute before adding the shrimp back in.
