6 bone-in, skin-on chicken thighs
1/4 cup honey
1/4 cup soy sauce (low sodium preferred)
3 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon apple cider vinegar
1 teaspoon ground ginger
1/2 teaspoon black pepper
1/4 teaspoon salt
1 tablespoon cornstarch mixed with 2 tablespoons cold water (for slurry)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with foil or parchment paper for easier cleanup.
Pat the chicken thighs dry thoroughly with paper towels. This helps the skin crisp. Place them skin-side up on the prepared baking sheet.
In a small bowl, whisk together the honey, soy sauce, olive oil, minced garlic, apple cider vinegar, ground ginger, pepper, and salt to create the sauce.
Brush half of the honey garlic sauce evenly over the chicken thighs, coating the tops and sides.
Bake the chicken for 25 minutes at 400°F.
While the chicken bakes, return the remaining half of the sauce to the stovetop. Bring it to a simmer over medium heat. Whisk in the cornstarch slurry and cook for 1 minute until the sauce thickens slightly into a glaze. Remove from heat.
After 25 minutes of baking, remove the chicken from the oven. Brush the thickened glaze generously over the chicken thighs.
Return the chicken to the oven and bake for another 10 to 15 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part. The skin should be browned and sticky.
Let the chicken rest for 5 minutes before serving.
Notes
For crispier skin, place a wire rack on top of your foil-lined baking sheet before placing the chicken on it.
If the sauce starts to look too dark before the chicken is done, loosely tent the chicken with foil.
Serve these chicken thighs with steamed broccoli or roasted potatoes.
