Prepare a quick, flavorful weeknight meal featuring pan-seared chicken coated in a sweet and savory honey garlic sauce, served over steamed rice.

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup uncooked white rice
  • 2 tablespoons vegetable oil, divided
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 2 green onions, sliced (for garnish)
  • 1 teaspoon sesame seeds (for garnish)

Instructions

  1. Cook the rice according to package directions. Keep warm.
  2. In a bowl, toss the cut chicken pieces with 1 tablespoon of vegetable oil and a pinch of salt and pepper.
  3. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  4. In the same skillet, combine the honey, soy sauce, rice vinegar, minced garlic, and grated ginger. Bring the mixture to a simmer over medium heat.
  5. In a small bowl, whisk together the cornstarch and cold water to create a slurry.
  6. Pour the slurry into the simmering sauce, stirring constantly until the sauce thickens, about 1 minute.
  7. Return the cooked chicken to the skillet and toss to coat completely with the honey garlic sauce.
  8. To assemble the bowls, divide the cooked rice among serving bowls. Top the rice with the sauced honey garlic chicken.
  9. Garnish each bowl with sliced green onions and sesame seeds before serving.

Notes

  • For added vegetables, stir-fry 1 cup of broccoli florets or sliced bell peppers in the skillet before cooking the chicken, then set them aside to add back in with the finished chicken.
  • Brown rice can be substituted for white rice; adjust cooking time as needed.
  • If you prefer a spicier sauce, add 1/2 teaspoon of red pepper flakes to the sauce mixture.
