Prepare a quick, flavorful chicken bowl featuring sweet and savory honey garlic glazed chicken served over rice with fresh, lightly prepared vegetables.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup cooked white rice or quinoa (for serving base)
  • 1 head broccoli, cut into florets
  • 1 large carrot, shredded
  • 2 tablespoons olive oil, divided
  • Salt and black pepper to taste
  • For the Sauce:
  • 1/2 cup honey
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. In a small bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, and ginger to make the sauce. Set aside.
  3. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  4. Add the remaining 1 tablespoon of olive oil to the same skillet. Add the broccoli florets and cook for 3 minutes, stirring occasionally. Add 2 tablespoons of water, cover, and steam for 2 minutes until bright green and tender-crisp. Remove the broccoli from the skillet.
  5. Return the cooked chicken to the skillet. Pour the prepared honey garlic sauce over the chicken. Bring the sauce to a simmer.
  6. Stir the cornstarch slurry and pour it into the simmering sauce. Cook, stirring constantly, until the sauce thickens and coats the chicken, about 1 minute.
  7. To assemble the bowls, divide the cooked rice or quinoa among four bowls. Top with the honey garlic chicken, steamed broccoli, and shredded carrots. Serve immediately.

Notes

  • For meal prep, store the chicken, vegetables, and rice separately in airtight containers. Combine just before eating to keep the vegetables crisp.
  • You can substitute the rice base with mixed greens for a lighter meal.
  • If you prefer roasted vegetables, toss the broccoli and carrots with oil and roast at 400°F (200°C) for 15 minutes before assembling the bowl.
