Ingredients
Scale
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 cup cooked white rice or quinoa (for serving base)
1 head broccoli, cut into florets
1 large carrot, shredded
2 tablespoons olive oil, divided
Salt and black pepper to taste
For the Sauce:
1/2 cup honey
1/4 cup low-sodium soy sauce
2 tablespoons rice vinegar
4 cloves garlic, minced
1 teaspoon grated fresh ginger
1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
Instructions
Season the chicken pieces lightly with salt and pepper.
In a small bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, and ginger to make the sauce. Set aside.
Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
Add the remaining 1 tablespoon of olive oil to the same skillet. Add the broccoli florets and cook for 3 minutes, stirring occasionally. Add 2 tablespoons of water, cover, and steam for 2 minutes until bright green and tender-crisp. Remove the broccoli from the skillet.
Return the cooked chicken to the skillet. Pour the prepared honey garlic sauce over the chicken. Bring the sauce to a simmer.
Stir the cornstarch slurry and pour it into the simmering sauce. Cook, stirring constantly, until the sauce thickens and coats the chicken, about 1 minute.
To assemble the bowls, divide the cooked rice or quinoa among four bowls. Top with the honey garlic chicken, steamed broccoli, and shredded carrots. Serve immediately.
Notes
For meal prep, store the chicken, vegetables, and rice separately in airtight containers. Combine just before eating to keep the vegetables crisp.
You can substitute the rice base with mixed greens for a lighter meal.
If you prefer roasted vegetables, toss the broccoli and carrots with oil and roast at 400°F (200°C) for 15 minutes before assembling the bowl.
