Make a flavorful weeknight dinner with this recipe for pan-seared honey garlic chicken served over rice and topped with a simple, rich, creamy sauce.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1/2 cup honey
  • 1/4 cup soy sauce (low sodium preferred)
  • 4 cloves garlic, minced
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon grated fresh ginger
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • Cooked white rice or brown rice, for serving
  • Steamed broccoli or green beans, for serving

Instructions

  1. Season the chicken pieces with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  2. Reduce the heat to medium. Add the minced garlic and ginger to the skillet and cook for 30 seconds until fragrant.
  3. Pour in the honey, soy sauce, apple cider vinegar, and chicken broth. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  4. Stir in the heavy cream and softened cream cheese until the cream cheese melts and the sauce is mostly smooth.
  5. Whisk the cornstarch slurry one more time and slowly pour it into the simmering sauce while stirring constantly. Cook for 1-2 minutes until the sauce thickens enough to coat the back of a spoon.
  6. Return the cooked chicken to the skillet and toss to coat completely in the honey garlic creamy sauce.
  7. To assemble the bowls, place a serving of cooked rice in each bowl. Top with the sauced chicken and a side of steamed vegetables.

Notes

  • For a slightly tangier sauce, substitute white wine vinegar for the apple cider vinegar.
  • If you prefer a thinner creamy sauce, use only half of the cornstarch slurry.
  • You can substitute cauliflower rice for traditional rice to lower the carbohydrate count.
