- 1 pound cooked corned beef, chopped
- 1 (16 ounce) can sauerkraut, drained well
- 1 cup Thousand Island dressing
- 12 slices rye bread, cubed
- 8 ounces Swiss cheese, shredded
- 1/4 cup butter, melted
- 1 tablespoon Dijon mustard
- Preheat your oven to 375 degrees Fahrenheit. Grease a 9×13 inch baking dish.
- In a large bowl, combine the chopped corned beef, drained sauerkraut, and Thousand Island dressing. Mix until evenly coated.
- In a separate small bowl, whisk together the melted butter and Dijon mustard.
- Layer half of the cubed rye bread in the bottom of the prepared baking dish.
- Spread the corned beef mixture evenly over the bread layer.
- Sprinkle half of the shredded Swiss cheese over the meat mixture.
- Top with the remaining cubed rye bread.
- Pour the butter and mustard mixture evenly over the top layer of bread.
- Sprinkle the remaining Swiss cheese over the top.
- Bake for 25 to 30 minutes, or until the cheese is melted and bubbly and the top is lightly browned.
- Let the casserole rest for 5 minutes before serving.
Notes
- For best results, squeeze as much liquid as possible from the sauerkraut before mixing.
- You can substitute pastrami for corned beef if you prefer.
- If you want a crispier top, place the dish under the broiler for the last minute, watching closely.
