A simple, make-ahead breakfast recipe packed with protein using peanut butter for flavor.

Ingredients

  • 1/2 cup rolled oats
  • 1 scoop (approx. 30g) vanilla or unflavored whey protein powder
  • 1 tablespoon chia seeds
  • 1 tablespoon natural peanut butter
  • 1 cup milk (dairy or non-dairy)
  • 1/2 teaspoon vanilla extract
  • Optional: 1 teaspoon maple syrup or sweetener

Instructions

  1. In a jar or container with a lid, combine the rolled oats, protein powder, and chia seeds. Mix these dry ingredients well.
  2. Add the peanut butter, milk, and vanilla extract to the jar.
  3. Stir or shake the mixture vigorously until all ingredients are fully combined and the protein powder is dissolved.
  4. Seal the container and place it in the refrigerator for at least 4 hours, or preferably overnight.
  5. In the morning, check the consistency. If it is too thick, add a splash more milk until you reach your preferred texture.
  6. Eat cold directly from the refrigerator.

Notes

  • For a thicker texture, reduce the milk by 1/4 cup initially.
  • You can store these oats for up to 3 days in the refrigerator for easy meal prepping.
  • To make this dairy-free, use almond, soy, or oat milk and ensure your protein powder is plant-based.
  • Add 1/4 cup of mashed banana before refrigeration for a banana peanut butter flavor variation.
