  • 1 lb ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 (15 oz) can diced tomatoes, undrained
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 large bell peppers, any color, tops removed and seeded
  • 1/4 cup shredded cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground turkey over medium heat until browned. Drain off any excess fat.
  3. Add chopped onion and minced garlic to the skillet. Cook until softened, about 5 minutes.
  4. Stir in cooked rice, diced tomatoes (with juice), Italian seasoning, salt, and pepper. Mix well.
  5. Spoon the turkey mixture evenly into the prepared bell pepper halves.
  6. Place the stuffed peppers in a baking dish. You can add a little water to the bottom of the dish to help create steam.
  7. Cover the baking dish with foil.
  8. Bake for 30-40 minutes, or until the peppers are tender.
  9. If using cheese, sprinkle it over the top during the last 5-10 minutes of baking.
  10. Serve hot and enjoy your flavorful meal!

Notes

  • For extra moisture, you can add a tablespoon of tomato paste to the turkey mixture.
  • Feel free to add other vegetables like corn or zucchini to the filling.
  • If you don’t have cooked rice, you can cook it separately while preparing the other ingredients.
  • Bell peppers can vary in size, so adjust the baking time as needed.
