Make this rich, buttery, and crunchy graham cracker toffee, often called Christmas Crack. It uses only five simple ingredients and requires no candy thermometer, making it the perfect quick holiday treat or last-minute dessert bar.

  • 1 sleeve (about 13-15 sheets) graham crackers
  • 1 ¼ cups dark brown sugar, packed
  • 1 ¼ cups unsalted butter (2 ½ sticks)
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper or aluminum foil and arrange the graham crackers in a single layer to cover the bottom completely.
  2. In a medium saucepan, combine the butter and brown sugar. Heat over medium heat, stirring constantly until the butter is melted and the sugar is dissolved. Bring the mixture to a full, rolling boil and let it boil for exactly one minute without stirring.
  3. Remove the saucepan from the heat immediately and stir in the vanilla extract.
  4. Pour the hot toffee mixture evenly over the graham crackers, spreading quickly to cover all the crackers.
  5. Bake for 5 minutes. The toffee should look bubbly.
  6. Remove the pan from the oven and immediately sprinkle the chocolate chips evenly over the hot toffee layer. Let the chocolate sit for 5 minutes to soften.
  7. Spread the melted chocolate smoothly over the toffee layer using an offset spatula. If desired, sprinkle with sea salt or chopped nuts now.
  8. Let the toffee cool completely at room temperature, or place it in the refrigerator for 30 minutes to set the chocolate.
  9. Once firm, break the toffee bark into irregular pieces. Store in an airtight container.

Notes

  • For an extra crunch, you can substitute pecans or walnuts for half of the chocolate chips, adding them when you add the chips.
  • To achieve the perfect snap without a thermometer, boiling the butter and sugar mixture for a full minute is the key step. Do not overcook past one minute.
