  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cooked, crumbled bacon or diced ham (optional)
  • 1/4 cup finely chopped spinach or bell pepper (optional)

Instructions

  1. Preheat your oven to 300°F (150°C). Lightly grease a 12-cup standard muffin tin.
  2. In a large bowl, whisk together the eggs, cottage cheese, milk, salt, and pepper until completely smooth. This step is key for a creamy texture.
  3. Stir in your desired mix-ins, such as shredded cheese, bacon, or vegetables. Do not overmix.
  4. Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Bake for 20 to 25 minutes, or until the egg bites are set and a knife inserted near the center comes out clean.
