Make quick, flavorful garlic noodles with a sticky, savory sauce that has a spicy kick. This recipe is ready fast for a weeknight meal.

  • 12 oz dried noodles (spaghetti, linguine, or ramen)
  • 6 tablespoons unsalted butter
  • 8 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon sriracha or chili garlic sauce (adjust to taste)
  • 1/4 cup reserved pasta water
  • 2 tablespoons grated Parmesan cheese (optional)
  • Green onions, sliced, for garnish

Instructions

  1. Cook the noodles according to package directions until al dente. Before draining, reserve about 1/2 cup of the starchy pasta water. Drain the noodles and set aside.
  2. While the noodles cook, melt the butter in a large skillet or wok over medium heat.
  3. Add the minced garlic to the melted butter and cook for about 1 minute until fragrant. Do not let the garlic brown.
  4. Stir in the soy sauce, oyster sauce, brown sugar, sesame oil, and sriracha. Cook for 30 seconds, stirring constantly until the sugar dissolves and the sauce thickens slightly.
  5. Add the cooked noodles to the skillet. Toss well to coat the noodles evenly with the sauce.
  6. Pour in 1/4 cup of the reserved pasta water. Continue tossing until the sauce becomes glossy and coats the noodles well, creating a sticky texture. Add more pasta water if the sauce seems too dry.
  7. Remove from heat. If using, toss in the Parmesan cheese until melted into the sauce.
  8. Serve immediately, garnished with sliced green onions.

Notes

  • For a richer flavor, substitute half the butter with unsalted butter mixed with 1 tablespoon of garlic powder.
  • If you prefer a less spicy version, omit the sriracha and add 1/2 teaspoon of smoked paprika for color and depth.
  • You can add cooked shrimp or shredded rotisserie chicken during the final tossing step to make this a complete meal.
