Make tender, intensely flavored steak bites quickly using a simple pan-searing method that locks in moisture.

  • 1.5 lbs sirloin or ribeye steak, cut into 1-inch cubes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Pat the steak cubes dry with paper towels. This step helps achieve a good sear.
  2. In a bowl, toss the steak cubes with salt, pepper, garlic powder, and paprika until evenly coated.
  3. Heat a large, heavy-bottomed skillet (cast iron works well) over medium-high heat until very hot. Do not add oil yet.
  4. Add the seasoned steak cubes to the hot, dry skillet in a single layer, ensuring not to overcrowd the pan. Work in batches if necessary.
  5. Sear the steak for 1 to 2 minutes per side until a deep brown crust forms. You are aiming for medium-rare to medium internal temperature for juiciness.
  6. Reduce the heat to medium-low. Add the butter and minced garlic to the skillet.
  7. As the butter melts, tilt the pan slightly and use a spoon to continuously baste the steak bites with the melted garlic butter for about 30 seconds.
  8. Remove the skillet from the heat immediately.
  9. Transfer the steak bites to a serving plate and spoon any remaining garlic butter sauce from the pan over the top.
  10. Garnish with fresh parsley before serving.

Notes

  • For the juiciest results, use a steak cut with good marbling, like ribeye.
  • Do not overcook the steak; remove it from the heat when it is slightly under your desired doneness, as it will continue to cook briefly after removal.
  • If you prefer a stronger garlic flavor, add 1/2 teaspoon of garlic salt to the initial seasoning mix.
