  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 6 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 sprigs fresh rosemary
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Pat the steak cubes completely dry with paper towels. Season evenly with salt and pepper.
  2. Place a large cast iron skillet over high heat. Add the olive oil. Wait until the oil just begins to smoke slightly.
  3. Add the steak cubes to the hot skillet in a single layer. Do not overcrowd the pan; cook in batches if necessary to maintain high heat.
  4. Sear the steak for 1.5 to 2 minutes per side until deep brown and crispy edges form. Remove the seared steak bites and set them aside on a clean plate.
  5. Reduce the heat to medium. Add the butter to the skillet. Once melted, add the minced garlic and rosemary sprigs. Cook for about 1 minute until the garlic is fragrant, being careful not to burn it.
  6. Stir in the Worcestershire sauce. Let the sauce bubble for 30 seconds.
  7. Return the steak bites to the skillet. Toss quickly to coat the steak in the garlic butter sauce. Cook for 30 seconds to warm through.
  8. Remove the rosemary sprigs. Stir in the fresh parsley. Serve immediately.

  • If you prefer a thinner sauce, add 1 tablespoon of beef broth when you add the Worcestershire sauce.
