  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1.5 lbs baby potatoes, halved or quartered
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potatoes with 1 tablespoon of olive oil, salt, pepper, rosemary, and thyme. Spread them in a single layer on a baking sheet.
  3. Roast the potatoes for 20-25 minutes, or until tender and lightly browned.
  4. While the potatoes are roasting, season the steak bites generously with salt and pepper.
  5. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat.
  6. Add the steak bites to the hot skillet in a single layer, being careful not to overcrowd the pan. Sear for 1-2 minutes per side until browned. Remove steak from skillet and set aside.
  7. Melt the butter in the same skillet over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
  8. Return the seared steak bites to the skillet. Add the roasted potatoes.
  9. Stir everything together to coat with the garlic butter. Cook for another 2-3 minutes until the steak is cooked to your desired doneness and the potatoes are heated through.
  10. Garnish with fresh parsley if desired. Serve immediately.
