A simple recipe for cooking moist salmon fillets topped with a rich garlic butter sauce brightened by fresh lemon and herbs.

  • 4 (6 ounce) salmon fillets, skin on or off
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dried dill
  • 1/2 teaspoon lemon zest

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat the salmon fillets dry with paper towels. Rub both sides of the fillets with olive oil, then season with salt and pepper. Place the fillets on the prepared baking sheet.
  3. In a small saucepan over medium heat, melt the butter. Add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic brown.
  4. Remove the butter mixture from the heat. Stir in the fresh lemon juice, chopped parsley, dried dill, and lemon zest. Mix well to combine the lemon herb butter sauce.
  5. Spoon half of the garlic butter sauce evenly over the tops of the salmon fillets.
  6. Bake for 12 to 15 minutes, or until the salmon flakes easily with a fork. Cooking time depends on the thickness of your fillets.
  7. Remove the salmon from the oven. Drizzle the remaining garlic butter sauce over the cooked salmon before serving.

Notes

  • For pan-searing, cook the salmon skin-side down in a hot, oiled skillet for 4-5 minutes, then flip and cook for another 3-4 minutes before pouring the sauce over the top during the last minute of cooking.
  • You can substitute fresh dill for dried if you prefer, using 1 tablespoon fresh instead of 1 teaspoon dried.
  • Serve this salmon with roasted asparagus or steamed rice to complete your meal.
