Prepare quick and flavorful garlic butter salmon bites served over lemon rice for an easy weeknight meal.

  • 1.5 lb salmon fillet, skin removed and cut into 1-inch cubes
  • 1 cup uncooked white rice
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Cook the rice according to package directions. Once cooked, stir in 1 tablespoon of butter and 1 tablespoon of lemon juice. Keep warm.
  2. Pat the salmon cubes dry with paper towels and season lightly with salt and pepper.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the salmon cubes in a single layer and sear for 2-3 minutes per side until lightly browned and cooked through. Remove salmon from the skillet and set aside.
  4. Reduce the heat to medium. Add the remaining 3 tablespoons of butter to the same skillet. Let it melt.
  5. Add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic brown.
  6. Stir in the remaining lemon juice, 1 teaspoon dried parsley, salt, and pepper. Cook for 30 seconds until the sauce thickens slightly.
  7. Return the cooked salmon bites to the skillet and toss gently to coat them completely in the garlic butter sauce.
  8. To assemble the bowls, divide the lemon rice among serving bowls. Top the rice with the garlic butter salmon bites.
  9. Garnish with the fresh chopped parsley before serving.

Notes

  • For meal prep, store the rice and salmon separately and combine just before eating to maintain texture.
  • You can substitute brown rice for white rice if preferred, adjusting the cooking time as necessary.
  • If you prefer a richer sauce, add 1 tablespoon of heavy cream after adding the lemon juice.
