Ultimate Garlic Butter Roasted Asparagus and Mushrooms

A simple recipe for roasting asparagus and mushrooms together with a rich garlic butter coating until tender-crisp and browned.

  • 1 pound fresh asparagus, trimmed
  • 1 pound cremini or white button mushrooms, cleaned and halved or quartered if large
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
  2. In a small bowl, combine the melted butter, minced garlic, salt, pepper, and dried thyme. Mix well.
  3. Place the trimmed asparagus and prepared mushrooms onto the baking sheet. Do not overcrowd the pan; use two sheets if necessary to allow the vegetables to roast, not steam.
  4. Pour about three-quarters of the garlic butter mixture over the vegetables. Toss everything directly on the pan until the vegetables are evenly coated. Spread the vegetables into a single layer.
  5. Roast for 12 to 15 minutes. The asparagus should be tender-crisp, and the mushrooms should show some browning.
  6. Remove the pan from the oven. Drizzle the remaining garlic butter over the vegetables and toss gently.
  7. Return to the oven for 3 to 5 more minutes, watching closely to prevent the garlic from burning. Remove when the mushrooms are nicely browned and the asparagus is cooked to your liking.
  8. Serve immediately.

Notes

  • For best browning on mushrooms, ensure they are dry before tossing with butter.
  • If you prefer a tangier flavor, squeeze 1 teaspoon of fresh lemon juice over the vegetables after they come out of the oven.
  • To add cheese, sprinkle 1/4 cup of grated Parmesan cheese over the vegetables during the last 3 minutes of roasting.
