1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1 head broccoli, cut into florets
1 red bell pepper, chopped
1 medium zucchini, chopped
3 tablespoons olive oil, divided
1 teaspoon salt, divided
0.5 teaspoon black pepper, divided
4 tablespoons unsalted butter
6 cloves garlic, minced
1 teaspoon dried Italian seasoning
0.5 teaspoon red pepper flakes (optional)
2 tablespoons fresh lemon juice
2 tablespoons fresh parsley, chopped
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
In a large bowl, toss the chicken cubes, broccoli florets, bell pepper, and zucchini with 2 tablespoons of olive oil, 0.5 teaspoon of salt, and 0.25 teaspoon of pepper.
Spread the seasoned chicken and vegetables in a single layer on the prepared baking sheet.
Roast for 15 minutes.
While the chicken and vegetables roast, prepare the garlic butter sauce. In a small saucepan over medium heat, melt the butter. Add the minced garlic, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute until fragrant, stirring constantly. Do not let the garlic brown. Remove from heat and stir in the lemon juice.
After the initial 15 minutes of roasting, remove the pan from the oven. Drizzle the garlic butter sauce evenly over the chicken and vegetables. Toss gently on the pan to coat.
Return the pan to the oven and roast for another 8 to 10 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the vegetables are tender-crisp.
Remove from the oven. Sprinkle with the remaining 0.5 teaspoon salt, 0.25 teaspoon pepper, and the fresh parsley before serving.
Notes
To keep the chicken juicy, avoid overcooking; check the internal temperature promptly at the 23-minute mark.
You can substitute the vegetables with mushrooms, onions, or asparagus based on what you have available.
Serve this dish over cooked rice or quinoa, or enjoy it alone for a low-carbohydrate meal.
