Make quick, flavorful chicken bites coated in a rich garlic butter sauce, served over cooked rice. This is a simple skillet meal perfect for weeknights.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch bites
  • 1 tablespoon olive oil
  • 6 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 tablespoon fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste
  • 2 cups cooked white rice, for serving

Instructions

  1. Season the chicken bites generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken bites and cook until browned on all sides and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic burn.
  4. Pour in the chicken broth and lemon juice. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan. Let the sauce reduce slightly for 2 minutes.
  5. Return the cooked chicken bites to the skillet. Toss them gently to coat them completely in the garlic butter sauce.
  6. Stir in the chopped parsley. Taste the sauce and add more salt or pepper if needed.
  7. Serve the garlic butter chicken bites immediately over the cooked white rice.

Notes

  • For extra flavor, add 1/4 teaspoon of red pepper flakes to the garlic when sautéing.
  • You can substitute brown rice or jasmine rice for the white rice.
  • If you prefer a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water, then stir this slurry into the simmering sauce until thickened.
