Ingredients
Scale
1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
1 large head of broccoli, cut into florets
4 tablespoons unsalted butter
5 cloves garlic, minced
1/2 cup chicken broth
1/4 cup heavy cream
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Optional: Red pepper flakes for heat
Instructions
Season the cut chicken pieces with salt and pepper.
Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Add the butter to the same skillet over medium heat. Once melted, add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic burn.
Add the broccoli florets to the skillet. Stir fry for 3-4 minutes until the broccoli starts to turn bright green. Add 2 tablespoons of chicken broth if the pan seems dry.
Pour in the remaining chicken broth, heavy cream, and Italian seasoning. Bring the sauce to a gentle simmer.
Return the cooked chicken to the skillet. Toss everything together until the chicken and broccoli are coated in the garlic butter sauce. Cook for 1-2 minutes until the sauce thickens slightly.
Taste and adjust seasoning if needed. Serve immediately over rice or noodles, if desired.
Notes
For a low-carb option, serve this stir fry over cauliflower rice.
Cut the chicken into uniform pieces so it cooks evenly.
If you prefer a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it into the simmering sauce during the last minute of cooking.
