  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/4 cup dry white wine (optional)
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • 4 slices Swiss cheese
  • 2 slices provolone cheese
  • 1/4 cup French fried onions (crispy fried onions)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until lightly browned. Remove chicken from skillet and set aside.
  4. Add the sliced onion to the same skillet and cook until softened and lightly caramelized, about 5-7 minutes.
  5. Add minced garlic and cook for 1 minute more until fragrant.
  6. Pour in the beef broth and white wine (if using). Stir in Worcestershire sauce and thyme. Bring to a simmer and cook for 5 minutes, scraping up any browned bits from the bottom of the skillet.
  7. Return the chicken breasts to the skillet, nestling them into the onion mixture.
  8. Top each chicken breast with Swiss cheese and provolone cheese.
  9. Sprinkle the French fried onions over the cheese.
  10. Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

Notes

  • For a richer flavor, you can use chicken thighs instead of breasts.
  • If you don’t have white wine, you can use an additional 1/4 cup of beef broth.
  • Ensure your skillet is oven-safe if you plan to bake directly in it. Otherwise, transfer the onion mixture to a baking dish before adding chicken and cheese.
