  • 12 large eggs
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 pound breakfast sausage or chorizo
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 12 large flour tortillas
  • Optional toppings: salsa, sour cream, avocado

Instructions

  1. In a large bowl, whisk together eggs, milk, salt, and pepper.
  2. Heat olive oil in a large skillet over medium heat. Add sausage and cook, breaking it up with a spoon, until browned. Remove sausage from skillet and set aside.
  3. Add onion and bell pepper to the same skillet and cook until softened, about 5-7 minutes.
  4. Return sausage to the skillet. Pour egg mixture over the sausage and vegetables.
  5. Cook, stirring occasionally, until eggs are set. Stir in shredded cheese until melted.
  6. Warm the tortillas slightly to make them pliable.
  7. Spoon about 1/2 cup of the egg mixture onto the center of each tortilla.
  8. Fold in the sides of the tortilla, then roll it up tightly from the bottom to create a burrito.
  9. Wrap each burrito individually in plastic wrap or foil.
  10. Place wrapped burritos in a freezer-safe bag or container.

Notes

  • For a vegetarian option, omit the sausage and add black beans or extra vegetables.
  • Customize your burritos with your favorite fillings like potatoes, jalapeños, or different cheeses.
  • When ready to eat, unwrap the burrito and microwave for 1-2 minutes, or bake in a preheated oven at 350°F (175°C) for 15-20 minutes until heated through.
