- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/2 cup soy sauce
- 1/4 cup honey
- 1/4 cup ketchup
- 2 tablespoons sriracha
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 tablespoon vegetable oil
- 1/4 cup chopped green onions, for garnish
- 1 tablespoon sesame seeds, for garnish
- In a medium bowl, whisk together soy sauce, honey, ketchup, sriracha, rice vinegar, ginger, and garlic.
- In a small bowl, whisk together cornstarch and water to create a slurry. Add this to the sauce mixture and stir until well combined.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken pieces to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes.
- Pour the sauce over the chicken in the skillet. Bring to a simmer, stirring constantly, until the sauce thickens, about 2-3 minutes.
- Serve hot, garnished with chopped green onions and sesame seeds.
