Quick Keto Egg Roll in a Bowl

Make a deconstructed egg roll quickly in one pan. This recipe is low carb, high protein, and ready in under 20 minutes.

Ingredients

  • 1 tablespoon sesame oil
  • 1 pound ground pork or ground turkey
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 (14.5 ounce) can water chestnuts, drained and chopped
  • 1 (8 ounce) can sliced mushrooms, drained
  • 4 cups coleslaw mix (shredded cabbage and carrots)
  • 1/4 cup low sodium soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or keto sweetener alternative
  • 1 teaspoon sriracha (optional)
  • 1/2 teaspoon ground black pepper
  • 2 green onions, sliced, for garnish
  • 1 tablespoon sesame seeds, for garnish

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add the ground pork or turkey to the skillet. Cook, breaking up the meat with a spoon, until browned, about 5 to 7 minutes. Drain off any excess grease.
  3. Add the minced garlic and grated ginger to the skillet. Cook for 1 minute until fragrant.
  4. Stir in the chopped water chestnuts and drained mushrooms. Cook for 2 minutes.
  5. Add the coleslaw mix to the skillet. Stir and cook until the cabbage begins to wilt, about 3 to 5 minutes.
  6. In a small bowl, whisk together the soy sauce, rice vinegar, sweetener, sriracha (if using), and black pepper.
  7. Pour the sauce mixture over the meat and vegetable mixture. Stir well to coat everything evenly. Cook for 1 to 2 minutes until the sauce thickens slightly.
  8. Remove from heat. Divide the mixture into bowls. Garnish with sliced green onions and sesame seeds before serving.

Notes

  • For a Paleo diet, use coconut aminos instead of soy sauce.
  • If you prefer ground chicken, use it in place of pork or turkey.
  • You can prepare the sauce mixture ahead of time to speed up the cooking process.
